Bittering Agents

The main bittering agents in many aperitifs are some combination of:

  • wormwood (vermouths)

  • gentian (Salers, Suze, Aveze, Amère Sauvage, Cascadia, Amaro Angeleno)

  • quinine [cinchona] (Byrrh, formerly Lillet)

  • gentian and quinine (Cocchi Americano

Mezcal-Amaro

Make a 50:50 with mezcal and an amaro. I've tried the following:

  • Mezcal Sacrificio + Amaro Averna + orange bitters: great!

  • Mezcal Sacrificio + Amero Montenegro + orange bitters: great!

Naked and Famous

An equal parts cocktail! Mezcal, aperol, yellow chartreuse, lime. You can make it with green chartreuse, but it isn't the same drink. See also: the Yellow Jacket.
