Bittering Agents
The main bittering agents in many aperitifs are some combination of:
wormwood (vermouths)
gentian (Salers, Suze, Aveze, Amère Sauvage, Cascadia, Amaro Angeleno)
quinine [cinchona] (Byrrh, formerly Lillet)
gentian and quinine (Cocchi Americano

Mezcal-Amaro
Make a 50:50 with mezcal and an amaro. I've tried the following:
Mezcal Sacrificio + Amaro Averna + orange bitters: great!
Mezcal Sacrificio + Amero Montenegro + orange bitters: great!

Naked and Famous
An equal parts cocktail! Mezcal, aperol, yellow chartreuse, lime. You can make it with green chartreuse, but it isn't the same drink. See also: the Yellow Jacket.
